Pumpkin Carob Crumb Muffins

These tasty treats will be sure to get you in the mood for Fall!

 

PUMPKIN CAROB CRUMB MUFFINS

Mix together wet ingredients:
1 x 29 oz Can of Pure Pumpkin
1 x 3 oz Can of Coconut Milk
2 Tbsp Lemon Juice

Mix together dry ingredients:
4 cups all-purpose flour
½ cup Carob Powder
2 tsp Cinnamon
1tsp Nutmeg
½ t Salt
2 t Baking Soda
1 ½ cup Coconut Sugar

Method:
Preheat oven to 350 °F.
Mix the wet and dry ingredients together.
Spoon in a greased muffin pan (fill to the top of each hole)
Sprinkle the crumb topping on top.
Bake for 25 minutes until a toothpick comes out clean.
Makes 21 muffins. Freezes well.

Crumb topping
½ cup all-purpose flour
1/3 cup Coconut sugar
Pinch of Salt
½ cup coconut oil
Mix together with a fork until crumbs form.
