Spinach Balls

Add a meat-free "meaty" treat to your dishes with these delicious and healthy meatballs.

 

SPINACH BALLS

Ingredients:

  • 6 Eggs (Can use Just egg’ substitute)

  • 10 oz Block frozen chopped spinach

  • 1 cup Grated Parmesan cheese (Can use vegan)

  • 8 oz Pepperidge Farm Herbed stuffing mix (Blue package, not the cubed one)

  • ½ cup melted butter or margarine

  • 1 Onion, chopped

Method:

Cook and drain spinach. Mix all ingredients together and form them into 1 inch balls. Place on a cookie sheet and bake at 350 degrees for 12 – 15 minutes. Delicious plain, in spaghetti sauce, in barbeque, or sweet & sour sauce. They freeze well too.
