Chickpea Noodle Soup

A fun and healthy alternative to chicken noodle soup. This soup will be just what the doctor ordered to warm you up and make you feel cozy.


INGREDIENTS

1 cup diced onion                                  

2 sliced carrots                                       

1 diced celery stalk                               

2 cubed med. potatoes                           

3 cloves crushed garlic                           

1/2 tsp thyme                                         

4 cups vegetable broth                           

2 cups water                                               

1/4 cup "chicken" seasoning (see recipe below)  

6 oz regular spaghetti                             

2 cups chickpeas                                  

                                                                                 

                                                                                 

“Chicken” Seasoning 

1 1/2 cup nutritional yeast

3 TBsp onion powder

1 TBp garlic powder 

1 1/2 Tbsp dried basil    

1 tsp oregano    

1/2 tsp turmeric

salt to taste

Mix together.

 

INSTRUCTIONS

Saute onion at med. heat about 3 minutes.

Add carrots,potato,celery - saute 2-3 min.

Add garlic, thyme, chicken seasoning,

veg. broth, water.  Bring to med.-low simmer

and cook veggies til tender for about 20 min.

Stir in chickpeas and cooked pasta.

Taste of salt, fresh cilantro sprinkled on top
